Carolyn's Zucchini Bread Recipe

Ingredients:

  • One stick +3 tablespoons of softened butter

  • 2 ⅔ cups of sugar

  • 4 eggs

  • ⅔ cup of water

  • 3 cups of shredded or finely chopped zucchini

  • 3 ⅓ cups of flour

  • 2 teaspoons baking soda

  • 1 ½ teaspoon salt

  • ½ teaspoon baking powder

  • 1 teaspoon cinnamon

  • 1 teaspoon ground cloves

  • 2 teaspoons vanilla

  • 1 cup chopped nuts – I use pecans

  • ⅔ cup of Craisins



Directions:

  1. Heat oven 350*

  2. Mix first five ingredients.

  3. Mix dry ingredients together then add to the zucchini mixture.

  4. Add vanilla, nuts and craisins.

  5. Bake 1 hour and 10 minutes in 2 9×5 loaf pans.

  6. Cool and add powdered sugar to the top of loaves.
