Ingredients:
One stick +3 tablespoons of softened butter
2 ⅔ cups of sugar
4 eggs
⅔ cup of water
3 cups of shredded or finely chopped zucchini
3 ⅓ cups of flour
2 teaspoons baking soda
1 ½ teaspoon salt
½ teaspoon baking powder
1 teaspoon cinnamon
1 teaspoon ground cloves
2 teaspoons vanilla
1 cup chopped nuts – I use pecans
⅔ cup of Craisins
Directions:
Heat oven 350*
Mix first five ingredients.
Mix dry ingredients together then add to the zucchini mixture.
Add vanilla, nuts and craisins.
Bake 1 hour and 10 minutes in 2 9×5 loaf pans.
Cool and add powdered sugar to the top of loaves.
