This salsa can be made and put immediately in the fridge to enjoy now, or it can be made and canned to preserve for later. It is an easy recipe for a those interested in canning (from beginner to advanced).
Ingredients:
28 ounce diced tomatoes (when fresh are not available)
1 onion
2 jalapenos or more
1T lemon juice
1 T sugar
1 t salt
1/2 t pepper
1 bunch of fresh cilantro
Directions:
In a food processor, finely chop the onion (I love my Ninja).
Add the rest of the ingredients and chop/blend well.
This will fill a 1 qt mason jar.
Refrigerate or process in water bath for canning preservation.
