Violet Jelly Recipe

Did you know that you can make delicious jelly using a plant that is likely right in your backyard? That’s right! Most family members said it tastes like grape and one said it tasted like strawberry! This yummy violet jelly is sweet and perfect for toast and cream cheese with crackers. It’s simple to make, and great to make with the kids (as you can see!). You can make it and put directly in the fridge to enjoy now, or can to preserve and enjoy later.



Ingredients:

  • 3 cups of violets (we picked ours from our yard!)

  • 2 1/2 cups of boiling water

  • Juice from 1 lemon

  • 1 box of Sure Jell

  • 3 1/3 cups of sugar


Directions:

  1. Collect violets with some cute friends!

  2. Cover violets in 1 quart mason jar with the boiling water and place lid on jar.

  3. Leave on counter for 24 hours.

  4. Strain the violets and add juice of 1 lemon to the violet tea. You will see some science and color change when the base and acid meet.

  5. Over high heat add one box of Sure Jell. Stir 1 minute.

  6. Add 3 ⅓ c sugar and stir another minute until dissolved.

  7. Ladle into five small mason jars.

  8. Refrigerate or give a hot water canning bath (see below).



#Canning Tip: This jelly can be made and put immediately in the fridge to enjoy now, or it can be made and canned to preserve for later. It is an easy recipe for a those interested in canning (from beginner to advanced).
